What does it smell and taste like?
In the nose we find an intense green fruitiness rich in green and orchard aromas: freshly cut grass, artichoke, tomato, tomato, fennel, as well as green banana and dried fruits; almond and green walnuts. In the mouth it has a strong spiciness and bitterness, with an evident sweetness and a slight astringency on the tongue. It is an EVOO for those who like intense oils.
Who is behind this bottle?
Varona is a young company that started production in 2017 in Sant Mateu (Castellón), led by Pablo Pascual, an agricultural engineer by training and a long family tradition in olive growing. His project is a combination of enthusiasm, effort and support from family and friends to make a dream come true. The elegance and style of the brand are a reflection of the quality of its AOVEs.
How or with what do I cook it?
The Morrut variety is ideal for combining with fish, we suggest cod kokotxas on a cauliflower and potato purée emulsified with this EVOO and salmon roe on top to give it the ultimate flavour contrast. Don’t forget that you can access this recipe if you subscribe to our newsletter.
