What does it smell like, what does it taste like?

The nose is immediately fruity and ripe green. It is a very fruity oil with notes of ripe banana, tomato, liquorice and truffle. Herbal hints of artichoke and cardoon. Medium spiciness and bitterness on the palate. The spiciness increases little by little and is persistent, leaving a slight sensation of astringency.

Who is behind this bottle?

The origin of Artajo’s wine and oil production dates back to 1780, located in Tudela. The Urzaiz family has reinvented itself in the method of cultivation and production of the oil and has opted for organic cultivation, an agricultural investment that is supported by olive oil tourism to relaunch a brand that is three centuries old. After years of hard work and perseverance, today they are among the top AOVES in the world, with awards in Japan, New York and the TOP 100 of EVOOLEUM.

How or with what do I cook it?

This oil is perfect for mushrooms, pulses and meats. Today we recommend it for a warm salad of chickpeas, tuna, cherry tomatoes, anchovies and fresh cheese. Don’t forget that you can access this recipe if you subscribe to our newsletter.
