Late harvest EVOO with intense green fruitiness. Balanced on the palate, with spicy, bitter, and sweet notes. Aromas of fresh grass, almond, artichoke, and tomato plant stand out. Complex, aromatic, and full of personality.
Who is behind this bottle?
David Taus, the creator of this project, was born in Cálig (Castellón). Agriculture began as a hobby that gradually became a way of life and a project with soul. His motto is that the oil is given away for free; what is charged for is the story behind each bottle, the culture and the effort that goes into it.
How or with what should I cook it?
We recommend a crostini with burrata cheese, artichokes, and a touch of lemon to pair with this EVOO. The burrata cheese and bread provide a creamy base that enhances its vegetal profile, while the artichokes and lemon intensify its fresh and balanced nuances.
