What does it smell and taste like?
This EVOO has a powerful fruity nose, with sweet aromas of banana and tomato greens to a lesser intensity. Green, leafy green and apple notes predominate. In the mouth it has a high density with great character and personality, with a balanced bitterness and pungency. Sensation of green banana peel, tomato and green almond peel. Alfafarenca is an indigenous variety of the Valencian Community that remains stable over time. It is an oil high in polyphenols and vitamin E.
Who is behind this EVOO?
In Alicante, we have Alquería la Almazara, Juan and his family arrived in Muro de Alcoy at the end of the 60s. It all began when, as a member of a cooperative, Juan decided to start his own way, to produce products of the highest quality and under the organic certificate. His olive trees are located at the tail end of the Beniarrés reservoir, some 350 metres above sea level, in the Comtat region, in the heart of the Sierra de Mariola Natural Park in Alicante.
How or with what do I cook it?
We suggest using this EVOO to give a different touch to a starter full of flavours and nuances: how about accompanying a good smoked salmon with a sauce of citrus fruits, wasabi and Alfafarenca EVOO? Don’t forget that you can access this recipe if you follow us in social media.
